My husband brought Thor to work today. Since it’s a day in between weekend and a holiday there’s not gonna be much people at the office today, so T could join him. They are not going to be at the office all day, but I got at least half the day to myself. The maintenance guys will hopefully show up at some point (they fixed the outdoor outlet a while ago but now it doesn’t work again) and that’s about all the interruptions I’m going to have today. 

I’ve told you before that I don’t really believe in New Years resolutions, cause if you want to do something or change something then just do it, don’t wait for a specific day. But then, I go against myself every year on that, haha (so I DO believe in it..?). I love to think about and make a list of what I want my new year – from my birthday and forward – should be about. Last year, when I turned the big 3, I sort of made a wish list for the year, but three weeks later my grandma died, we traveled a lot and my husband was looking for a new job that eventually made us move to a new city. All that threw everything off and I have had a roller coaster year of emotions. 

I’ve been a housewife for almost three years now and it’s been driving me crazy. The whole time I have wanted to do stuff but I have not known what that stuff is. Saturn’s Return, big time! But, I’m ready to kick some ass now, aka my own (which I have told myself before, so you’ll never know). Today, when I don’t have to take potty breaks (hahaha, I mean Thor’s of course), I have some time to really write out what I want. Then it’s up to me to do it:)

I had an Awesome Birthday Weekend!

I love birthdays and yesterday was mine! This weekend was awesome! 

On Saturday, after a skype with my parents and a workout at the gym, we drove to the Scandinavian Butik and I got some yummy licorice. Then we got an hour full body massage. There’s tons of massage places here and we just picked one on the map. It was really nice. We like deep tissue massages and this really wasn’t, but it was very relaxed for sure. And she massaged my feet a longer time which I appreciate, some barely touches the feet. Very good start on my birthday weekend:)

My husband had told me to wake up early for my birthday. He told me a week ago that he had a surprise for me:) I love surprises! Around 8am, we drove for about a half hour and then I saw the “iFly – Indoor Skydiving” building. Aah! That’s what I had thought it was but I didn’t want to get my hopes up. I’ve been wanting to do this for some time. It was so much fun!!! I will make a separate post about it. I have a video that I will try to upload for you guys.

After the flying, we went home quick and then to a place with outdoor seating for brunch.  A bloody mary, eggs benedict, a mimosa and a surprise dessert that my husband had ordered. 

It had started to be pretty hot outside then, about 32ºc, and we were sooo full from brunch, that we just hung out on our terrace for a while. In the afternoon, we took Thor for a walk and sat down at a coffee place for a little bit and in the evening we watched the movie Okja. We wanted to see it because we had actually seen the filming of it in NYC last summer. I thought it would be a cute movie, but I ended up crying (and I never cry for a movie!) and my heart actually hurt. If someone is considering becoming a vegetarian/vegan, then this movie could have you decide. 

Anyway. My birthday weekend was absolutely perfect! My husband really spoils me ♥ 

Coconut chocolate nut bars

The other day I made chocolate nut bars. I love to find easy things to bake through instagram and this one I had screenshot’ed a while ago. As always, I made my own version of it. Like, I used different nuts and I used vanilla extract instead of some fake sugar (which I don’t think you actually need). Super simple, yummy and filling. I made half the recipe but I will write out the whole thing for you guys.

1 cup Coconut butter
1 cup cocoa powder
¼ cup honey
few drops of vanilla extract
crushed cashews and almonds, like ½-1 cup

Warm up the coconut butter by having the jar in warm water for 10 minutes. Mix coconut butter with the cocoa powder, honey and vanilla. Crush the nuts and add to the mix. Spread out on baking paper or aluminum foil. Freeze for a few hours, make into smaller bars and then store in the fridge. 

They are pretty filling. This week, every time I feel my sweet tooth screaming, usually around 3pm, I just open the fridge and have one piece which really is enough to stop the craving for sweets. I have most of the bars left which is unusual to me:) 

Thor’s first bike ride

Yesterday I took Thor for a short bike ride. Last time I wanted to try that, I couldn’t figure out how to get the basket on the bike. Later that day, my husband and I figured it out together, but it’s tricky. I biked through the city last week with the basket on. It still doesn’t really fit, so I had to improvise to have it stay in a good placement. 

Since Thor hasn’t done this before I thought I would start slow to introduce it to him. He sat in the basket and I walked the bike to the parking lot behind our building and then I biked around there for a little bit so he could feel the breeze in his fluff. After a while, the basket dropped down to where I didn’t want it (it kinda touches the front brakes) so I had to take him out of it. I really need to figure out the best way to attach the basket on the bike. Never have I had problems with a bicycle basket before. Confused.

It was so fun to have him with me on the bike! He seemed to like it. He was probably a little confused but seemed to understand that he shouldn’t try to jump out. I had him sit on a fold up long scarf so that he would be comfortable and wouldn’t get his claws stuck in the basket. Looking forward to take him for longer adventures:) 

Cove Island Park

Yesterday we left Thor at our neighbors apartment around 9:30 and then we packed a few things and drove to the Cove Island, a beach and park area 10 minutes from our apartment. Not much people around that time which was nice, they all came some time after noon. We stayed for about two hours. I dipped my whole body in the ocean twice, first swim of the year. So cold!! Jim, as always, didn’t go deeper than up to his ankles. I was one of the few people who actually let the whole body be under the cold water. I grew up by the beach in Sweden so I’m used to cold water:) 

After we had packed our things and left it in the car, we went for a little walk in the park there. Lots and lots of families there who brought their big grills and all their relatives. Seemed like a normal Sunday for them:) Very cute area. We will definitely go back there. 

In the afternoon, our neighbor dropped T off, J grilled some steak and corn on the rooftop and then we spent the rest of the night on our computers, me in my office upstairs blogging and J downstairs playing games. 

This was really a wonderful weekend! Can’t be happier:) I hope you had an awesome weekend as well!
