This weekend felt long

chocolateballs weekend-yumGoat cheese and olives stuffed with garlic is two of my favorites!

It felt like this weekend was really long which is wonderful. Normally the days goes by so fast that you can’t keep up or remember what you’ve done.
On Saturday we went to Brooklyn to do taxes. I wanted to come with to see how it works here. The woman came two hours late (not ok!) so we went for brunch while we waited. Pancakes and mimosa, yum! Then it took really long time for her to fix everything and in the end she had made a lot of mistakes which sucks. Oh well, it will ok in the end, just a little more work for Jim. During the Sunday we went for necessary shopping, cleaning, omelette brunch, basketball (March Madness), workout and lots of fun with Thor. Not a special weekend but we got a lot of time together at least.
On Friday we bought a lot of good stuff that we could enjoy three nights in a row. Cheese, bread, sausage, salad and stuffed olives. I also found the good kind of cocoa (I finished the last one over a year ago and the German cocoa that tastes the best they don’t have everywhere, I have tried three different kinds and none is good) and just had to make chocolate balls for fika. Our weekend is mostly about food. We gladly to go out to eat and we love to try new places, but sometimes we have food at home. To enjoy good food and drinks is nice to do together.

Victoria’s Secret surprise

image

On Thursday, my hubby came home from work with a gift for me. Oh, I have the worlds best husband ♥
I have looked at a kimono at Victoria’s Secret since I moved here and I have mentioned it a few times throughout the years. He came home with a pink bag and guess if I got happy (and shocked) when I saw what was inside.
Right now I’m wearing my super soft kimono, drinking coffee and reading blogs while my two boys are sleeping here next to me on the couch. Relaxed and nice Saturday morning before Jim and I need to get going.

Carrot Soup

A while ago, I made a really tasty carrot soup. My sister sent me a recipe and I changed it a bit. The soup was easy to make and it was incredibly good. The leftovers I can imagine can be a really nice dip for cucumber, celery or chips on a Saturday night.
I didn’t really measure, I usually don’t, so just go on feeling and taste. It said in the recipe that you should use creme fraiche, but normal sour cream here in the US doesn’t quite taste the same as in Sweden, so I chose to use philadelphia creme cheese which made the soup a little thicker, but you can try what you think is best.

Sahar gjorde jag min soppa:
This is how I made my soup:

  • morotter / carrots
  • 1 paprika (jag anvande gron) / 1 pepper (I used green)
  • ca 1 msk gul lok / ca 1 msk yellow onion
  • ingefara / ginger
  • gronsaksbuljon / vegetable broth

Skiva allt i sma bitar. Koka i vatten mixat med gronsaksbuljongen. Koka tills allt ar mjukt.
Slice everything in small pieces. Cook in water mixed with the vegetable broth. Cook until everything is soft.

I mashed everything with a fork first and then put everything in the blender to make it more like pure.

  • gradde / cream
  • philadelphia farskost / philadelphia cream cheese
  • salt, pepper

Enjoy!
Put the vegetable pure in a pot and add cream and cream cheese. Add spices. Serve the soup with crackers or fresh bread. Enjoy!

Waffle Day today

Today is Waffle Day (in Sweden at least). I really wish I had a Swedish waffle iron, but if I would buy one in Sweden and bring here it would probably nor work anyway. We have a different strength on electricity here. Brought my curler first time I came here and it never got warm, so in a waffle iron it would probably only be waffle-soup. But I wonder if there is similar irons here in USA to get a hold on…? Or, maybe some nice person can invite me to a waffle-fika when I’m in Sweden 😉 But, I thought I would make normal Swedish pancakes for breakfast today, but I don’t have either flour, milk or egg at home so might be for dinner tonight instead.
Are you gonna eat waffles today?

Update:
I found heart-shaped waffle irons online. But, I think we should wait to buy one until we have a house.

Gorgeous sunset behind the stadium

We had a really nice weekend in Washington DC. Since we have been there before we didn’t need to stress with tourism. It is very nice to go to a place and where you don’t have to look at your watch or be stressed about that you don’t have time to do everything.
On Saturday afternoon we met up with Mike, Brook and their parents at a cute flea market and in the evening we went to M and B apartment and watch basketball, ate good cheese and homemade pizza. Super relaxed and nice. We went home early on Sunday so that we could get Thor and snuggle with him for the rest of the night.
