Poached egg breakfast

Good Morning! I’m having a really awesome morning. For breakfast I made myself two poached eggs on English muffin with some baby spinach. Yum! My eggs were a bit old so I tried a new way to make them. I watched a clip with Jamie Olivier yesterday who suggested if your eggs are old to spin the water before you pour the egg in, and it worked. They might have cooked a little too long, but I thought they were still perfect. 

Today is going to be a warm day so I will try to do all the computer stuff now and then go outside and soak up all the sun I can:)

Coconut chocolate nut bars

The other day I made chocolate nut bars. I love to find easy things to bake through instagram and this one I had screenshot’ed a while ago. As always, I made my own version of it. Like, I used different nuts and I used vanilla extract instead of some fake sugar (which I don’t think you actually need). Super simple, yummy and filling. I made half the recipe but I will write out the whole thing for you guys.

1 cup Coconut butter
1 cup cocoa powder
¼ cup honey
few drops of vanilla extract
crushed cashews and almonds, like ½-1 cup

Warm up the coconut butter by having the jar in warm water for 10 minutes. Mix coconut butter with the cocoa powder, honey and vanilla. Crush the nuts and add to the mix. Spread out on baking paper or aluminum foil. Freeze for a few hours, make into smaller bars and then store in the fridge. 

They are pretty filling. This week, every time I feel my sweet tooth screaming, usually around 3pm, I just open the fridge and have one piece which really is enough to stop the craving for sweets. I have most of the bars left which is unusual to me:) 

Homemade bread

Good morning! 

So, on Sunday I baked bread to enjoy for breakfast this week. After searching for a simple bread recipe online, I found one that was super easy (sorry, I don’t remember what website). It tastes good and it’s so easy to bake.

1½ cups warm water (not too hot, like a baby bath)

1 tbs honey 

1 tsp salt 

1 tbs active dry yeast (I used a package of 2.5 tsp, which is a little less, but it worked)

3 – 4½ cups flour (I used normal white flour)

* Heat the water and mix it with the honey, salt and the dry yeast in a glass bowl. Let it sit for about 5-10 minutes until there’s foam on the top. 

* Add the flour. You don’t want the dough to stick to your hands, so keep adding flour until it’s one non-sticky dough. I mixed it in the bowl and then worked it on a floured counter. Form a loaf and cover with a towel for 20 minutes. Set your oven for 400 degrees.

* Make cuts in the loaf and place in the middle of the oven. Let it bake for 15-20 minutes, depending on your oven. I had it in for a full twenty minutes.

This is so easy! It’s something I’ll definitely bake again:) 

Chocolate balls with dates

Yesterday I tried to make chocolate balls in a new way. I found a recipe online. I didn’t have coconut oil at home so I used butter instead and I also added chia seeds. 

Igar provade jag att gora chokladbollar pa ett nytt satt. Jag hittade ett recept pa natet. Jag hade ingen kokosolja hemma sa jag tog smor istallet och jag la ocksa till chicafron. 

½ dl dates / ½ dl dadlar 
½ dl oats / ½ dl havregryn
1,5 tablespoon unsweetened cocoa / 1,5 matsked osotad kakao
1 tbsp coconut flakes / 1 matsked kokosflingor
1 tbsp chia seeds / 1 matsked chicafron
½-1 tbsp butter / ½-1 matsked smor 
2-3 teaspoons cold coffee / 2-3 teskedar kallt kaffe 

Mix oats, cocoa, chia seeds and coconut flakes. I chopped the dates to small pieces and added it to the mix along with the butter. Add as much coffee as you need to make it easier to work with. Roll it into balls, about 4 normal size or 8 tiny ones like I did. Roll them in coconut flakes and put them in the freezer. Serve with a nice cup of coffee or tea. 
This is very easy to make and it is perfect for your sweet tooth in the afternoon. They taste really good and there is no sugar added. I felt that 4 small ones was enough, so I have 4 more for todays afternoon “Fika” break 🙂

Mixa havregryn, kakao, chiafron och kokosflingor. Jag hackade dadlarna till sma bitar och la till det i mixen tillsammans med smor. Tillsatt sa mycket kaffe som du behover for att gora det lattare att arbeta med. Rulla till bollar, ungefar 4 normal storlek eller 8 sma som jag gjorde. Rulla dem i kokos flingor och lagg in dem i frysen. Servera med en god kopp kaffe eller te. 
Det ar valdigt enkelt att gora och det ar perfekt for din sweet tooth pa eftermiddagen. De ar riktigt goda och de har inget tillsatt socker. Jag kande att 4 sma var tillrakligt, sa jag har 4 till for dagens eftermiddags Fika paus 🙂

Pumpkin Seeds

Vi tog alla pumpakärnor och gjorde gott snacks. Väldigt enkelt och godare än att köpa dem i affären:)

We took all the pumpkin seeds and made good snacks. Very simple and tastier than buying them at the store:)

1. Skölj kärnorna
2. Lägg kärnorna i en kastrull med vatten och salt och låt dem koka i 10 min
3. Häll av vattnet och lägg dem på en plåt. Häll på olja och ev. mer salt och in i ugnen. Vi läste att de skulle vara inne i 10 min, men de blev inte tillräckligt krispiga. Vi lät dem vara inne i 20-25 min, men det är en smaksak
4. Vi la dem i en glasburk med lock, hällde på mer salt (vi älskar salt) och skakade om
5. Njut av goda pumpa kärnor

1. Rinse the seeds 2. Place the seeds in a pot with water and salt and let them boil for 10 min 3. Pour of the water and place them on a baking tray. Add oil and possibly more salt and into the oven. We read that they would be in for 10 min, but they were not crispy enough. We let them be in there for 20-25 min, but that’s up to each person how they want it 4. We put them in a glass jar with lid, poured more salt (we love salt) and shook 5. Enjoy delicious pumpkin seeds
